Potato and bacon soup is a rich, comforting soup made with potatoes, crispy bacon, and often a creamy base. Perfect for chilly days or as a hearty starter.


🍽 Ingredients

  • 4–5 medium potatoes, peeled and diced
  • 4–6 slices of bacon, chopped
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt & pepper
  • Optional: shredded cheddar cheese, chives, sour cream

  1. Cook bacon: In a large pot, cook chopped bacon until crispy. Remove and drain on paper towel.
  2. Sauté veggies: In the same pot, sauté onion and garlic in bacon fat until soft.
  3. Cook potatoes: Add diced potatoes and broth. Bring to a boil, then simmer until potatoes are tender (15–20 min).
  4. Blend (optional): For a creamy texture, use an immersion blender to partially blend the soup.
  5. Add cream & bacon: Stir in milk or cream, season with salt and pepper, and add back crispy bacon.
  6. Serve: Top with cheese, chives, or a dollop of sour cream.
