🐖 Oven-Roasted Pork Roast

🛒 Ingredients (Serves 4–6)

  • 3–4 lb pork roast (shoulder, loin, or boneless)
  • 2–3 cloves garlic, minced
  • 1–2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1 cup chicken or vegetable broth (for pan drippings)
  • Optional: 1 onion, quartered; 2–3 carrots and potatoes, chopped, for roasting

🍳 Instructions

1️⃣ Prep the Pork

  1. Pat the pork roast dry.
  2. Rub olive oil all over the roast.
  3. Mix garlic, salt, pepper, paprika, and thyme/rosemary; rub evenly over the meat.

2️⃣ Sear the Roast (Optional but Recommended)

  • In a hot skillet over medium-high heat, sear the roast 2–3 minutes per side until browned. This adds flavor and color.

3️⃣ Roast in Oven

  1. Preheat oven to 350°F (175°C).
  2. Place the roast on a rack in a roasting pan. Optionally surround with onions, carrots, and potatoes.
  3. Pour 1 cup broth into the pan to keep the roast moist.
  4. Roast for 1.5–2 hours, or until internal temperature reaches 145°F (63°C) for medium-rare, or 160°F (71°C) for medium.

4️⃣ Rest and Serve

  1. Remove roast from oven and cover loosely with foil. Let rest 10–15 minutes—this keeps it juicy.
  2. Slice and serve with pan juices or gravy.

💡 Tips

  • Optional Glaze: Mix honey, mustard, and a little apple cider vinegar; brush over the roast for the last 15 minutes of roasting.
  • Use a meat thermometer for perfect doneness.
  • Leftovers make great sandwiches or tacos!
