Pineapple cake

Here’s a simple and delicious pineapple cake recipe you can try:


Ingredients

For the cake:

  • 1 can (20 oz) crushed pineapple, drained
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ cup milk

For the frosting (optional):

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Pineapple slices or crushed pineapple for topping

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream Butter & Sugar: In another large bowl, beat the butter and sugar until light and fluffy.
  4. Add Eggs & Vanilla: Beat in the eggs, one at a time, then add vanilla extract.
  5. Combine Wet & Dry: Gradually add the dry ingredients, alternating with milk. Mix until just combined.
  6. Fold in Pineapple: Gently fold in the drained crushed pineapple.
  7. Bake: Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Let the cake cool completely in the pan.
  9. Frost (Optional): Whip heavy cream with powdered sugar until stiff peaks form. Spread over the cooled cake and top with pineapple slices or extra crushed pineapple.
