Ingredients

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened

  • 1 cup whole milk
  • ½ cup freshly squeezed orange juice
  • Zest of 2 oranges

  • 2 tbsp orange zest

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar

Instructions

1. Prepare the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla and orange zest.
  5. Alternate adding the dry ingredients and milk, starting and ending with dry ingredients. Mix until just combined.
  6. Stir in orange juice.
  7. Divide batter evenly between pans and bake 25–30 minutes or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

2. Prepare the Orange Cream Filling (Optional):

  1. Whip heavy cream, powdered sugar, vanilla, and orange zest until stiff peaks form.

3. Prepare the Frosting:

  1. Beat butter until creamy. Gradually add powdered sugar.
  2. Add orange juice, vanilla, and a pinch of salt. Beat until smooth and fluffy.
  3. Add a few drops of food coloring if you want a brighter orange shade.

4. Assemble the Cake:

  1. Place one cake layer on a serving plate.
  2. Spread a layer of orange cream filling (if using).
  3. Place the second cake layer on top.
  4. Frost the top and sides with the orange frosting.
  5. Optional: garnish with orange zest or thin orange slices.

Tips:

  • For a stronger creamsicle flavor, add 1 tsp orange extract to the frosting.
  • You can brush each cake layer with orange juice for extra moisture.
  • Serve chilled or at room temperature.
