Mushroom sauce

Here’s a simple and flavorful Mushroom Sauce 🍄 — perfect for pasta, steak, chicken, or mashed potatoes.


Ingredients (Serves 4)

  • 2 tbsp butter or olive oil
  • 1 small onion or shallot, finely chopped
  • 2–3 cloves garlic, minced
  • 10 oz (280g) mushrooms, sliced (button, cremini, or your choice)
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • ½ cup heavy cream or sour cream (for creamier sauce)
  • ½ cup chicken or vegetable broth
  • Salt & black pepper, to taste
  • Optional: 1 tbsp Worcestershire sauce or soy sauce for extra depth
  • Optional garnish: fresh parsley

Instructions

  1. Sauté aromatics
    • Heat butter or oil in a skillet over medium heat.
    • Add onion or shallot and cook 3–4 minutes until softened.
    • Add garlic and cook 30 seconds until fragrant.
  2. Cook mushrooms
    • Add mushrooms and thyme.
    • Cook 5–7 minutes until mushrooms release their moisture and begin to brown.
  3. Add liquids
    • Pour in broth and simmer 2–3 minutes.
    • Stir in cream (or sour cream) and cook 2–3 minutes until sauce thickens.
  4. Season & serve
    • Add salt, pepper, and optional Worcestershire or soy sauce.
    • Serve over pasta, chicken, steak, or mashed potatoes.
    • Garnish with fresh parsley if desired.

Tips

  • Extra depth: Deglaze the pan with a splash of white wine before adding broth.
  • Thicker sauce: Simmer a few extra minutes, or mix 1 tsp cornstarch with water and stir in.
  • Vegan option: Use olive oil and coconut cream or cashew cream instead of butter and heavy cream.
