Meat Loaf

Posted on March 10, 2026 by Admin

Here’s a classic, hearty meatloaf recipe that’s moist, flavorful, and easy to make:

Ingredients (for 4–6 servings):

  • 1½ lbs ground beef (or mix beef & pork)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning
  • ½ cup ketchup (plus extra for topping)
  • Optional: ¼ cup grated Parmesan cheese

Instructions:

  1. Preheat oven
    • Preheat to 350°F (175°C).
  2. Prepare the meat mixture
    • In a large bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, salt, pepper, thyme, and Parmesan (if using).
    • Mix until just combined—don’t overwork the meat to keep it tender.
  3. Shape the meatloaf
    • Form the mixture into a loaf shape (about 8×4 inches) and place it in a baking dish or on a lined sheet pan.
  4. Add topping
    • Spread a thin layer of ketchup (or a mix of ketchup + brown sugar + mustard) over the top of the loaf.
  5. Bake
    • Bake for 50–60 minutes, until the internal temperature reaches 160°F (71°C).
    • For extra caramelized topping, broil for 2–3 minutes at the end.
  6. Rest and serve
    • Let the meatloaf rest 5–10 minutes before slicing.
    • Serve with mashed potatoes, roasted vegetables, or a simple salad.

💡 Tip: You can make mini meatloaves in a muffin tin for individual servings—they cook faster and are great for meal prep.

I can also give a sweet & tangy glaze version that makes the top sticky and caramelized, like the classic diner style.

Do you want that version too?
