Grilled Chicken & Broccoli Bowls

Posted on March 9, 2026 by Admin

Here’s a simple and tasty idea for Grilled Chicken & Broccoli Bowls—perfect for a healthy, filling meal:

Ingredients (for 2-3 servings)

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup cooked rice, quinoa, or cauliflower rice
  • 1-2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • Optional toppings: sesame seeds, chopped green onions, a drizzle of soy sauce or teriyaki sauce

Instructions

  1. Marinate the chicken
    • Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
    • Let it sit for 10–15 minutes (or up to 2 hours in the fridge for more flavor).
  2. Cook the broccoli
    • Steam or lightly sauté broccoli until tender-crisp (about 4–5 minutes).
    • Optional: toss with a little olive oil, salt, and pepper.
  3. Grill the chicken
    • Preheat a grill or grill pan over medium-high heat.
    • Cook chicken 5–7 minutes per side, until fully cooked and juices run clear.
    • Let it rest for 5 minutes, then slice into strips.
  4. Assemble the bowls
    • Divide the cooked rice/quinoa into bowls.
    • Top with sliced grilled chicken and broccoli.
    • Add optional toppings like sesame seeds, green onions, or a drizzle of sauce.

💡 Tip: For extra flavor, you can marinate the chicken in a mix of soy sauce, honey, and garlic before grilling.

If you want, I can also give a one-pan version so you can cook chicken, broccoli, and rice together in one dish for super easy cleanup. Do you want me to do that?
