Crockpot Chicken

Here’s a simple and delicious Crockpot Chicken 🍗 recipe—set it and forget it for an easy, flavorful meal:


Ingredients

  • 4–6 chicken breasts or thighs (bone-in or boneless)
  • 1 cup chicken broth
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp dried thyme or Italian seasoning
  • 2–3 carrots (cut into chunks, optional)
  • 2–3 potatoes (cut into chunks, optional)

Instructions

  1. Prepare the Crockpot
    • Spray the crockpot with non-stick cooking spray or lightly oil.
  2. Layer Ingredients
    • Place onion slices and garlic at the bottom of the crockpot.
    • Lay chicken on top.
    • Add carrots and potatoes if using.
    • Pour chicken broth over everything and sprinkle with salt, pepper, paprika, and herbs.
  3. Cook
    • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through (internal temperature 75 °C / 165 °F).
  4. Serve
    • Serve hot with rice, mashed potatoes, or bread.
    • Optionally, spoon some juices over chicken for extra flavor.

  • For extra flavor, sear chicken in a skillet for 2–3 minutes per side before adding to the crockpot.
  • Add cream, cheese, or herbs at the end for a richer sauce.
  • You can shred the chicken after cooking to make tacos, sandwiches, or casseroles.
