Here’s a quick and delicious way to make a cheesy dip with tortilla chips:

Ingredients:

  • 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 1 cup milk or heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp paprika or chili powder (optional, for a little kick)
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions:

  1. Make the cheese sauce:
    • In a medium saucepan, melt butter over medium heat.
    • Whisk in flour and cook for about 1 minute to make a roux.
    • Gradually whisk in milk until smooth.
    • Cook, stirring constantly, until it thickens (about 3–5 minutes).
  2. Add cheese:
    • Lower heat and stir in shredded cheese until melted and smooth.
    • Season with garlic powder, paprika, salt, and pepper.
  3. Serve:
    • Pour the cheesy dip into a bowl and serve warm with tortilla chips.
