Cheesy Beef Goulash

Cheesy Beef Goulash is a hearty, comforting one-pot meal—perfect for busy weeknights. It combines seasoned ground beef, tender pasta, tomato sauce, and plenty of melted cheese.


Cheesy Beef Goulash

Servings: 4–6

Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (15 oz) tomato sauce
  • 1 can (14–15 oz) diced tomatoes
  • 1½ cups elbow macaroni (uncooked)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • Optional: ½ cup corn or chopped bell peppers

Instructions

  1. Brown the beef
    • In a large pot or deep skillet over medium heat, cook the ground beef until browned.
    • Add onion and cook 3–4 minutes until softened.
    • Stir in garlic and cook about 30 seconds.
  2. Add the sauce ingredients
    • Stir in tomato sauce, diced tomatoes, beef broth, paprika, Italian seasoning, salt, and pepper.
  3. Cook the pasta
    • Add the uncooked macaroni.
    • Bring to a gentle simmer, cover, and cook about 12–15 minutes, stirring occasionally, until pasta is tender.
  4. Add the cheese
    • Reduce heat to low and stir in cheddar and mozzarella until melted and creamy.
  5. Serve
    • Let sit a couple of minutes to thicken.
    • Serve hot with a sprinkle of extra cheese or parsley.

Optional Variations

  • Extra cheesy: Add ½ cup cream cheese or more shredded cheddar.
  • Spicy: Add red pepper flakes or diced jalapeños.
  • Veggie boost: Stir in spinach, mushrooms, or zucchini.
  • Oven-baked version: Transfer to a baking dish, top with cheese, and bake 10 minutes at 375°F (190°C) until bubbly.
