Ingredients (Serves 2-3):

  • 200g penne pasta
  • 250g shrimp, peeled and deveined
  • 2 cups fresh spinach leaves
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese
  • ½ tsp red chili flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta:
    Boil penne in salted water according to package instructions until al dente. Drain and set aside, reserving ½ cup pasta water.
  2. Cook the shrimp:
    Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove shrimp from pan and set aside.
  3. Make the sauce:
    In the same skillet, sauté onion and garlic until fragrant. Add red chili flakes if using.
    Pour in the cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time.
  4. Add spinach and pasta:
    Stir in fresh spinach until wilted. Add cooked penne and shrimp back to the skillet. Toss everything together until well coated.
  5. Serve:
    Garnish with chopped parsley and extra Parmesan if desired. Serve hot.

This makes a creamy, cheesy, and slightly garlicky pasta with tender shrimp and fresh spinach—perfect for a quick gourmet dinner.
