🧾 Ingredients (4 servings)

  • 1 medium cauliflower, cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • Salt and pepper, to taste
  • Optional: pinch of nutmeg or mustard powder

🥘 Instructions

  1. Cook the cauliflower:
    • Boil or steam cauliflower florets for 5–7 minutes until just tender. Drain and set aside.
  2. Make the cheese sauce:
    • In a saucepan, melt butter over medium heat.
    • Stir in flour to make a roux, cooking 1–2 minutes.
    • Gradually add milk, whisking constantly, until thickened.
    • Remove from heat and stir in shredded cheddar, salt, pepper, and optional nutmeg or mustard powder.
  3. Combine and bake:
    • Preheat oven to 375°F (190°C).
    • Place cauliflower in a baking dish and pour cheese sauce over it.
    • Sprinkle extra cheese on top.
  4. Bake:
    • Bake 20–25 minutes until bubbly and golden on top.
  5. Serve:
    • Serve warm as a side with roasted meats, fish, or as a vegetarian main.

  • For extra flavor, add sautéed onions or garlic to the cheese sauce.
  • Breadcrumbs on top give a crispy crust.
