Here’s a simple, classic Chicken Soup recipe that’s cozy, flavorful, and perfect for any day:


Ingredients (Serves 4–6)

  • 1 whole chicken (3–4 lbs) or 2–3 lbs bone-in chicken pieces
  • 8 cups water or low-sodium chicken broth
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1–2 bay leaves
  • Salt and pepper to taste
  • Optional: fresh parsley, thyme, or dill
  • Optional: noodles, rice, or small potatoes

Instructions

  1. Make the Broth: Place chicken and water/broth in a large pot. Bring to a boil, then lower heat and simmer 45–60 minutes. Skim off foam from the surface.
  2. Remove & Shred Chicken: Take out the chicken, let cool slightly, then shred the meat, discarding bones (or leave some meat on for extra flavor).
  3. Cook Vegetables: Add carrots, celery, and onion to the broth. Simmer 15–20 minutes until tender.
  4. Combine: Return shredded chicken to the pot. Add garlic, bay leaves, salt, and pepper. Simmer 5–10 minutes.
  5. Optional Additions: Add noodles, rice, or potatoes and cook until done.
  6. Finish & Serve: Remove bay leaves, taste, adjust seasoning, garnish with fresh herbs, and serve hot.

  • Extra Flavor: Roast chicken or sauté vegetables before adding broth.
  • Immune Boost: Add turmeric or ginger.
  • Slow Cooker Version: Cook all ingredients on low for 6–8 hours.
