Rice Krispie Treat Cheesecake

Ingredients

For the crust:

  • 3 cups Rice Krispies cereal
  • 4 tablespoons butter
  • 1 package (10 oz) marshmallows

For the cheesecake layer:

  • 16 oz (450 g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Optional toppings:

  • Melted chocolate or chocolate chips
  • Sprinkles
  • Caramel drizzle

Instructions

1. Make the Rice Krispie crust

  1. In a large saucepan, melt butter over low heat.
  2. Add marshmallows and stir until fully melted and smooth.
  3. Remove from heat and fold in Rice Krispies cereal until coated.
  4. Press the mixture firmly into the bottom of a greased 9-inch springform pan. Let it cool slightly.

2. Prepare the cheesecake filling

  1. In a mixing bowl, beat cream cheese until smooth.
  2. Add sugar and vanilla, mixing until creamy.
  3. Beat in eggs, one at a time, until well combined.

3. Assemble and bake

  1. Pour cheesecake filling over the Rice Krispie crust and smooth the top.
  2. Bake at 325°F (160°C) for 40–45 minutes, until the center is almost set.
  3. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

4. Add toppings (optional)

  • Drizzle melted chocolate, caramel, or sprinkle with extra Rice Krispies or candy before serving.
