Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (oil-packed is best, drain excess)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Optional: fresh basil or parsley for garnish

Instructions

  1. Cook the chicken
    • Season chicken breasts with salt and pepper.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  2. Make the sauce
    • In the same skillet, sauté onions until soft (3–4 minutes).
    • Add garlic and sun-dried tomatoes, cook 1–2 minutes until fragrant.
    • Pour in chicken broth, scraping up any browned bits from the pan.
    • Stir in heavy cream, Parmesan, and Italian seasoning. Simmer 3–5 minutes until slightly thickened.
  3. Combine & finish
    • Return chicken to the skillet, spooning sauce over it.
    • Simmer 2–3 minutes until chicken is heated through and coated in the creamy sauce.
  4. Serve
    • Garnish with fresh basil or parsley.
    • Serve with pasta, rice, or crusty bread to soak up the sauce.

Tips

  • Extra flavor: Add a splash of white wine when sautéing the onions.
  • Thicker sauce: Let it simmer a few extra minutes or stir in 1 tsp cornstarch mixed with water.
  • Vegetable boost: Add spinach or mushrooms to the sauce for added texture and nutrition.
