Stuffed pepper soup

Here’s a hearty, comforting Stuffed Pepper Soup recipe 🥣🌶️ — tastes just like stuffed peppers but in a cozy, spoonable form.


Ingredients (Serves 4–6)

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2–3 bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ cup uncooked rice (or 1 cup cooked rice added at the end)
  • Optional garnish: shredded cheese, fresh parsley

Instructions

  1. Cook the meat
    • In a large pot or Dutch oven, brown the ground beef with diced onions until fully cooked.
    • Drain excess fat.
  2. Add aromatics and peppers
    • Stir in garlic and diced bell peppers. Cook 2–3 minutes until slightly softened.
  3. Add liquids and seasonings
    • Add diced tomatoes, tomato sauce, broth, oregano, basil, salt, and pepper.
    • Stir well to combine.
  4. Add rice
    • If using uncooked rice, add now. Simmer on low for 20–25 minutes until rice is tender.
    • If using cooked rice, add at the very end just to warm through.
  5. Simmer & serve
    • Let soup simmer 5–10 more minutes for flavors to meld.
    • Serve hot, optionally topped with shredded cheese or parsley.

Tips

  • Make it quicker: Use pre-cooked rice and frozen peppers.
  • Extra flavor: Add a splash of Worcestershire sauce or a pinch of crushed red pepper flakes for a little kick.
  • One-pot option: This soup is perfect for slow cookers — cook on low 6 hours, then add rice at the end.
