Slow cooker chicken

Here’s a simple and flavorful slow cooker chicken recipe 🍗⏲️ — perfect for a hands-off, cozy meal.


Ingredients (Serves 4–6)

  • 4–6 boneless, skinless chicken breasts or thighs
  • 1 onion, sliced
  • 3–4 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup cream or coconut milk (optional for creamy version)
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • Optional: 2–3 carrots, sliced, or potatoes for a complete meal

Instructions

  1. Prepare the slow cooker
    • Spray the inside with cooking spray or lightly oil.
  2. Season the chicken
    • Sprinkle chicken with salt, pepper, paprika, and thyme.
  3. Layer ingredients
    • Place onions and optional veggies at the bottom.
    • Lay chicken on top and sprinkle with garlic.
    • Pour chicken broth over everything.
  4. Cook
    • Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  5. Optional creamy finish
    • About 30 minutes before serving, stir in cream or coconut milk for a richer sauce.
  6. Serve
    • Serve chicken with sauce over rice, noodles, or mashed potatoes.
    • Garnish with fresh parsley if desired.

Tips

  • Extra flavor: Add a splash of lemon juice or soy sauce to the broth.
  • Thicker sauce: Mix 1–2 tsp cornstarch with a little water and stir into the sauce near the end of cooking.
  • Variety: You can use bone-in chicken, but reduce cooking time slightly if using smaller pieces.
