Taco Spaghetti

Here’s a fun, cheesy fusion dish: taco spaghetti 🌮🍝 — think taco night meets pasta night!


Ingredients (Serves 4–6)

  • 8 oz spaghetti
  • 1 lb ground beef (or chicken/turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (10 oz) diced tomatoes with green chilies
  • ½ cup tomato sauce or salsa
  • 1 cup beef broth or water
  • 1–1½ cups shredded cheddar cheese
  • Salt & pepper to taste

Optional toppings:

  • Sour cream
  • Green onions
  • Cilantro
  • Jalapeños
  • Crushed tortilla chips

Instructions

  1. Cook the spaghetti
    • Boil in salted water until al dente. Drain and set aside.
  2. Cook the meat
    • In a large skillet, heat oil over medium heat.
    • Add onion and cook until soft (3–4 minutes).
    • Add garlic and cook 30 seconds.
    • Add ground beef and cook until browned. Drain excess fat.
  3. Add taco flavor
    • Stir in taco seasoning, diced tomatoes (with juices), salsa, and broth.
    • Simmer 5–7 minutes to thicken slightly.
  4. Combine with pasta
    • Add cooked spaghetti to the skillet and toss to coat.
  5. Add cheese
    • Sprinkle cheese over the top and cover until melted (or mix it in).
  6. Serve
    • Top with your favorite taco toppings and enjoy!

Tips & Variations

  • Make it spicier with extra jalapeños or hot sauce 🔥
  • Use cream cheese or a little heavy cream for a creamy version
  • Swap spaghetti for penne or rotini if you prefer
