🌮 Ingredients (makes 4 tacos)

  • 4 small tortillas (corn or flour)
  • 1–2 ripe avocados, sliced or mashed
  • 1 cup black beans (cooked or canned, drained & rinsed)
  • ½ cup corn kernels (fresh, frozen, or roasted)
  • ¼ cup red onion, finely chopped
  • 1 small tomato, diced
  • ½ cup shredded lettuce or cabbage
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional toppings: sour cream, salsa, hot sauce, shredded cheese

  1. Prepare the avocado
    Slice or mash the avocado. For mashed avocado, add a squeeze of lime, salt, and pepper.
  2. Warm tortillas
