🛒 Ingredients

  • 1 ½ lbs chicken (thighs or breast, cut into pieces)
  • 2 tbsp oil

  • 2–3 cloves garlic, minced
  • 2 cups chicken broth

  • Optional: 1–2 potatoes, diced

🍽️ Instructions

  1. Brown the Chicken

    • Season chicken with salt and pepper, then brown on all sides (about 5–7 minutes). Remove and set aside.
  2. Cook Veggies
    • In the same pot, sauté onions and peppers until softened (5–6 minutes).
    • Add garlic and cook 1 minute.
  3. Build the Stew
    • Return chicken to the pot.
    • Add broth, diced tomatoes (if using), paprika, thyme, salt, and pepper.
  4. Simmer
    • Bring to a boil, then reduce heat and cover.
