Here’s a simple and healthy recipe for Protein Cottage Cheese Bread—soft, high in protein, and perfect for breakfast, snacks, or sandwiches.


🥖 Ingredients (Makes 1 loaf)

  • 1 cup cottage cheese (full-fat or low-fat)
  • 4 large eggs
  • 1/2 cup oat flour (or almond flour for low-carb)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Optional: herbs (rosemary, parsley) or spices for flavor

🥄 Instructions

  1. Preheat Oven:
    Preheat oven to 350°F (175°C). Grease a small loaf pan or line with parchment paper.
  2. Mix Ingredients:
    In a blender or bowl, combine cottage cheese, eggs, oat flour, baking powder, and salt. Blend or whisk until smooth. Add herbs or spices if desired.
  3. Pour & Bake:
    Pour batter into the prepared loaf pan. Bake for 35–40 minutes, until a toothpick inserted in the center comes out clean.
  4. Cool & Slice:
    Let the bread cool slightly before slicing.

💡 Tips:

  • For extra protein, you can add 1–2 scoops of unflavored protein powder—reduce flour slightly to keep the texture right.
  • Use almond flour to make it low-carb and keto-friendly.
  • This bread is soft and moist—store leftovers in the fridge for up to 5 days.
