🍲 Stuffed Pepper Soup

Stuffed Pepper Soup has all the flavors of classic stuffed peppers—but in a cozy, easy-to-make soup!


🧾 Ingredients

  • 500g ground beef
  • 1 tbsp oil
  • 1 onion (chopped)
  • 2–3 bell peppers (any color, chopped)
  • 2 cloves garlic (minced)
  • 1 can diced tomatoes
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup cooked rice (or uncooked—see tip)

🔥 Instructions

  1. Cook beef: In a large pot, brown the ground beef. Drain excess fat.
  2. Sauté veggies: Add onion, bell peppers, and garlic. Cook until soft.
  3. Build soup: Stir in diced tomatoes, tomato paste, and broth.
  4. Season: Add Italian seasoning, salt, and pepper.
  5. Simmer: Cook for 20–25 minutes.
  6. Add rice: Stir in cooked rice and simmer 5 more minutes.

🍚 Rice Tip

  • Cooked rice: Add at the end (best texture)
  • Uncooked rice: Add earlier with extra broth and cook longer

🧀 Optional Add-Ins

  • Shredded cheese on top
  • Fresh parsley
  • A dash of hot sauce 🌶️

💡 Tips

  • Use a mix of red, green, and yellow peppers for extra flavor
  • Swap beef for chicken or turkey for a lighter version
  • This soup freezes really well 👍
