Slow Cooker Meatballs and Potatoes 🥩🥔

A comforting, hands-off meal where tender meatballs and soft potatoes cook together in a flavorful sauce. Perfect for busy days!


🧾 Ingredients (Serves 4)

Meatballs:

  • 500g ground beef or pork (or a mix)
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 2 tbsp chopped parsley

Potatoes & Sauce:

  • 500g baby potatoes, halved
  • 1 onion, sliced
  • 2 cups beef broth
  • 1 can (400g) diced tomatoes (optional)
  • 1 tsp dried thyme or rosemary
  • 1 tbsp olive oil

👩‍🍳 Instructions

  1. Prepare meatballs:
    • Mix meat, breadcrumbs, milk, egg, garlic, salt, pepper, paprika, and parsley.
    • Shape into small meatballs (~1–1.5 inches).
  2. Layer in slow cooker:
    • Place onions and potatoes at the bottom.
    • Arrange meatballs on top.
    • Pour broth (and tomatoes if using) over everything.
    • Sprinkle thyme or rosemary.
  3. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours.
    • Meatballs should be cooked through, potatoes soft, and flavors melded.
  4. Optional thickening:
    • Remove ½ cup of liquid and mix with 1 tbsp cornstarch.
    • Stir back in to thicken sauce before serving.

🍽️ Serving Suggestions

  • Serve hot, straight from the slow cooker.
  • Sprinkle extra parsley for color.
  • Great with crusty bread to soak up the sauce.

  • For extra flavor, brown meatballs first in a skillet (optional).
  • Baby potatoes work best because they cook evenly; cut larger potatoes into chunks.
  • You can add carrots or green beans for more veggies.
