Pickled beets are tangy, sweet, and full of nutrients—perfect as a side dish, salad topping, or snack! This recipe keeps it light and healthy.


🧾 Ingredients (Makes about 4 cups)

  • 4–5 medium beets (washed, trimmed, peeled if desired)
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2–3 tbsp honey or maple syrup (adjust to taste)
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: 1–2 garlic cloves, sliced, or fresh herbs like thyme or dill

👩‍🍳 Instructions

1️⃣ Cook the beets

  • Boil or steam beets until tender (about 25–30 minutes for medium beets).
  • Slice into ¼-inch rounds or cubes once cooled slightly.

2️⃣ Prepare the pickling liquid

  • In a saucepan, combine vinegar, water, honey, salt, and pepper.
  • Bring to a gentle simmer until honey dissolves.

3️⃣ Combine and jar

  • Place sliced beets in a clean jar or container.
  • Pour warm pickling liquid over the beets.
  • Add garlic or herbs if using.

4️⃣ Chill and marinate

  • Let cool to room temperature, then cover and refrigerate for at least 24 hours for best flavor.

5️⃣ Serve

  • Enjoy as a side dish, salad topping, or snack.
  • Keeps in the fridge for 2–3 weeks.

  • For extra tang, add a splash of lemon juice.
  • Use different herbs or spices (like cloves, mustard seeds, or cinnamon sticks) for variety.
  • Thinly sliced beets work great in sandwiches or wraps.
