🥣 Reuben Soup

- 2 tbsp butter
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 2 cups corned beef (diced)
- 1 cup sauerkraut (drained and chopped)
- 3 cups chicken or beef broth
- 2 cups potatoes (peeled and diced)
- 1 cup carrots (sliced)
- 1 cup Swiss cheese (shredded)
- 1 cup half-and-half or cream
- 2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- Salt and black pepper to taste
- Optional: rye bread croutons for serving

3️⃣ Add broth and potatoes

- Stir in Swiss cheese, half-and-half, Dijon mustard, and Worcestershire sauce.

- Taste and adjust salt and pepper.
