🫑 Stuffed Pepper Soup

This is a warm, comforting soup that tastes just like classic stuffed peppers — but in a bowl! It’s hearty, flavorful, and perfect for weeknight dinners.


🧾 Ingredients

  • 1 lb ground beef (or turkey)
  • 1 onion (chopped)
  • 3 bell peppers (any color, chopped)
  • 2 cloves garlic (minced)
  • 1 cup rice (uncooked)
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef or chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1–2 tbsp olive oil

Optional: shredded cheese for topping


👩‍🍳 Instructions

1️⃣ Cook the beef

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, cook until soft.
  • Add ground beef and cook until browned. Drain excess fat.

2️⃣ Add vegetables and rice

  • Stir in chopped bell peppers and rice. Cook for 2–3 minutes.

3️⃣ Add liquids and seasoning

  • Pour in diced tomatoes and broth.
  • Add Italian seasoning, salt, and pepper.

4️⃣ Simmer

  • Bring to a boil, then reduce heat and simmer 20–25 minutes until rice is tender.

5️⃣ Serve

  • Ladle soup into bowls and top with shredded cheese if desired.

🍽️ Tips

  • For a thicker soup, reduce broth slightly or add a spoonful of tomato paste.
  • You can swap ground beef for ground turkey or chicken for a lighter version.
  • Add fresh parsley or basil for extra flavor.
