Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, chopped

- 1½ cups elbow macaroni (uncooked)
- 1 tsp paprika
- 1 tsp Italian seasoning

- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- Optional: ½ cup corn or chopped bell peppers
Instructions
- Brown the beef
- In a large pot or deep skillet over medium heat, cook the ground beef until browned.
- Add onion and cook 3–4 minutes until softened.
- Stir in garlic and cook about 30 seconds.
- Add the sauce ingredients
- Stir in tomato sauce, diced tomatoes, beef broth, paprika, Italian seasoning, salt, and pepper.
- Cook the pasta
- Add the uncooked macaroni.
- Bring to a gentle simmer, cover, and cook about 12–15 minutes, stirring occasionally, until pasta is tender.
- Add the cheese
- Reduce heat to low and stir in cheddar and mozzarella until melted and creamy.
- Serve
- Let sit a couple of minutes to thicken.
- Serve hot with a sprinkle of extra cheese or parsley.
Optional Variations
- Extra cheesy: Add ½ cup cream cheese or more shredded cheddar.
- Spicy: Add red pepper flakes or diced jalapeños.
