No-knead bread

Here’s a simple and foolproof no-knead bread recipe — perfect for soft, crusty homemade bread without all the kneading!


🧾 Ingredients (1 loaf)

  • 3 cups all-purpose flour (or bread flour)
  • ½ tsp instant yeast (or active dry yeast)
  • 1 ½ tsp salt
  • 1 ½ cups warm water (about 110°F / 43°C)

🍞 Instructions

  1. Mix the dough:
    • In a large bowl, combine flour, yeast, and salt.
    • Add warm water and stir with a spoon until it forms a shaggy, sticky dough.
    • Cover the bowl with plastic wrap or a clean towel.
  2. Let it rise:
    • Leave at room temperature for 12–18 hours (overnight works great).
    • The dough should double in size and be bubbly.
  3. Shape the dough:
    • Lightly flour a surface and gently fold the dough over itself a couple of times.
    • Shape into a ball.
    • Place on a piece of parchment paper and let rest 30–60 minutes while you preheat the oven.
  4. Preheat oven & bake:
    • Place a Dutch oven (or oven-safe pot with lid) in the oven and preheat to 450°F (230°C).
    • Carefully place the dough (with parchment paper) into the hot pot and cover.
    • Bake 30 minutes covered, then 15–20 minutes uncovered until golden brown and crusty.
  5. Cool & enjoy:
    • Remove bread from the pot and let it cool on a wire rack for at least 30 minutes before slicing.

💡 Tips:

  • The dough is very sticky — don’t be tempted to add lots of flour; it’s supposed to be wet.
  • You can add herbs, garlic, or cheese to the dough for extra flavor.
  • Store leftover bread in a paper bag; it keeps the crust crisp longer than plastic.
