Ingredients (6–8 servings)

Filling:

  • 4 cups mashed potatoes (about 2 lbs potatoes)
  • 1/4 cup butter
  • 1/4–1/2 cup milk or cream
  • Salt and pepper to taste
  • Optional: shredded cheddar cheese for topping

  1. Prepare mashed potatoes
    • Boil potatoes until tender, then mash with butter, milk, salt, and pepper. Set aside.
  2. Cook meat filling
    • In a skillet, sautĂ© onions, garlic, and carrots until softened.
    • Add ground lamb and cook until browned.
    • Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
    • Add broth and peas; simmer until slightly thickened (5–10 minutes).
  3. Assemble pie
    • Preheat oven to 375°F (190°C).
    • Spread meat mixture in a baking dish.
    • Top evenly with mashed potatoes. Use a fork to create small ridges for a golden top.
    • Optional: sprinkle shredded cheese on top.
  4. Bake
    • Bake 25–30 minutes until top is golden and edges bubble.
  5. Serve
    • Let rest 5 minutes before serving.

  • Vegetable boost: Add corn, green beans, or mushrooms.
  • Rich potatoes: Add cream, cream cheese, or roasted garlic to mashed potatoes.
  • Herb twist: Fresh thyme, rosemary, or parsley can enhance flavor.
  • Make-ahead: Assemble and refrigerate, then bake later.
