Slow Cooker Potatoes

Ingredients

  • 2–3 lbs small red or Yukon gold potatoes, cut into halves or quarters
  • 3–4 cloves garlic, minced
  • 2–3 tbsp olive oil or melted butter

  • 1 tsp dried rosemary or thyme (optional)
  • ½ cup chopped onion (optional)

Instructions

1. Prepare the Potatoes

  • Wash and cut potatoes into evenly sized pieces for even cooking.
  • Toss with olive oil or butter, garlic, salt, pepper, and herbs.

2. Add to Slow Cooker

  • Place potatoes (and onion if using) in the slow cooker.
  • Stir to coat everything evenly.

3. Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are fork-tender.

4. Serve

  • Serve as-is, or top with shredded cheese, sour cream, green onions, or crispy bacon bits.

Tips

  • For crispy edges, transfer cooked potatoes to a baking sheet and broil 3–5 minutes before serving.
  • Use baby potatoes for a quicker cook time.
  • You can also add carrots, bell peppers, or mushrooms to make it a roasted veggie medley.
