Cabbage soup

Cabbage soup is a light, healthy, and hearty soup made primarily with cabbage and other vegetables. It’s popular for detox diets, comfort meals, and easy weeknight dinners.


Ingredients

  • 1 small head of cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 1 can (14–15 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika (optional)
  • Salt and black pepper to taste
  • 1–2 tbsp olive oil

Optional additions:

  • Potatoes, green beans, bell peppers, or zucchini
  • Cooked sausage or ground meat for protein

Instructions

  1. Sauté vegetables
    • In a large pot, heat olive oil over medium heat.
    • Add onion, garlic, carrots, and celery. Sauté 5–7 minutes until softened.
  2. Add cabbage and broth
    • Stir in chopped cabbage, tomatoes, broth, and seasonings.
  3. Simmer
    • Cover and simmer for 25–30 minutes until cabbage is tender.
  4. Adjust seasoning
    • Taste and add more salt, pepper, or spices as needed.
  5. Serve
    • Serve hot, optionally with crusty bread or a sprinkle of Parmesan cheese.

Tips

  • For a thicker soup, mash some of the cabbage or vegetables after cooking.
  • Leftovers taste even better the next day as flavors meld together.
  • Freeze in portions for quick, healthy meals later.
