Cabbage soup

Ingredients
- 1 small head of cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped

- 1 tsp dried thyme
- 1 tsp paprika (optional)
- Salt and black pepper to taste

Optional additions:

- Cooked sausage or ground meat for protein
Instructions
- Sauté vegetables
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, carrots, and celery. Sauté 5–7 minutes until softened.
- Add cabbage and broth
- Stir in chopped cabbage, tomatoes, broth, and seasonings.
- Simmer
- Cover and simmer for 25–30 minutes until cabbage is tender.
- Adjust seasoning
- Taste and add more salt, pepper, or spices as needed.
- Serve
- Serve hot, optionally with crusty bread or a sprinkle of Parmesan cheese.

- For a thicker soup, mash some of the cabbage or vegetables after cooking.
