🍲 Chicken Soup

🛒 Ingredients (Serves 4–6)

  • 1 whole chicken (3–4 lbs), cut into pieces, or 4–5 bone-in chicken breasts/thighs
  • 8 cups water or chicken broth
  • 2–3 carrots, sliced
  • 2–3 celery stalks, sliced
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme or 2 sprigs fresh thyme
  • 1 bay leaf (optional)
  • 1 cup egg noodles or pasta (optional)
  • Fresh parsley for garnish

🍳 Instructions

1️⃣ Cook the Chicken

  • In a large pot, place chicken pieces and cover with water or broth.
  • Bring to a boil, then reduce heat to a simmer.
  • Skim off any foam that forms on top.

2️⃣ Add Vegetables & Seasonings

  • Add carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper.
  • Simmer 45–60 minutes until chicken is cooked and vegetables are tender.

3️⃣ Remove Chicken

  • Take out chicken pieces and shred the meat, discarding bones and skin if desired.
  • Return shredded chicken to the pot.

4️⃣ Add Noodles (Optional)

  • Add egg noodles or pasta and cook 6–8 minutes until tender.

5️⃣ Serve

  • Taste and adjust seasoning.
  • Garnish with fresh parsley and serve hot.

💡 Tips

  • Use bone-in chicken for richer broth.
  • Add a squeeze of lemon or a pinch of dill for extra flavor.
  • Leftovers taste even better the next day after flavors meld.
