🥗 Marinated Cucumber, Onion & Tomato Salad

🛒 Ingredients (Serves 4)

  • 2 cups cucumbers, sliced
  • 1 cup tomatoes, chopped or cherry tomatoes halved
  • ½ red or white onion, thinly sliced
  • ¼ cup vinegar (white vinegar or apple cider vinegar)
  • 2 tbsp olive oil
  • 1 tbsp sugar (optional, for balance)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh parsley or dill, chopped (optional)

🍳 Instructions

1️⃣ Prepare Vegetables

  • Slice cucumbers and onion thinly.
  • Chop tomatoes or halve cherry tomatoes.

2️⃣ Make the Marinade

  • In a bowl, whisk together vinegar, olive oil, sugar, salt, and black pepper.

3️⃣ Combine

  • Add cucumbers, tomatoes, and onions to the bowl.
