🍲 Lasagna Soup

🛒 Ingredients (Serves 4–6)

  • 1 lb ground beef or Italian sausage
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 6–8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

🍳 Instructions

1️⃣ Cook Meat & Aromatics

  • In a large pot, brown ground beef or sausage over medium heat.
  • Add onion and garlic and sauté 2–3 minutes until softened.

2️⃣ Add Broth & Tomatoes

  • Stir in crushed tomatoes, chicken or beef broth, Italian seasoning, salt, and pepper.
  • Bring to a simmer.

3️⃣ Cook Noodles

  • Add broken lasagna noodles to the simmering soup.
  • Cook 8–10 minutes, stirring occasionally, until noodles are tender.

4️⃣ Add Cheese

  • Stir in half of the mozzarella cheese until melted.
  • Spoon soup into bowls and top with dollops of ricotta, remaining mozzarella, and Parmesan.

5️⃣ Garnish & Serve

  • Sprinkle with fresh basil or parsley.
  • Serve hot with crusty bread if desired.

💡 Tips

  • For a creamier soup, stir ½ cup heavy cream into the soup before serving.
  • You can prepare the soup ahead of time and reheat—add noodles fresh when serving if you want them firmer.
  • Swap ground beef for ground turkey for a lighter version.
