Stuffed Pepper Soup 🫑🍲
This soup tastes like classic stuffed peppers but is much easier to make in one pot.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 bell peppers (any color), diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 cup cooked rice
- 1 tsp Italian seasoning
- ½ tsp black pepper
- Salt to taste
- 1 cup shredded mozzarella or cheddar cheese (optional)
Instructions
- Cook the beef
In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat. - Add vegetables
Stir in chopped onion, bell peppers, and garlic. Cook for about 3–4 minutes until slightly soft. - Add tomatoes and broth
Pour in diced tomatoes, tomato sauce, and beef broth. Stir well. - Season and simmer
Add Italian seasoning, pepper, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes. - Add rice
Stir in cooked rice and cook for another 5 minutes. - Serve
Ladle into bowls and top with shredded cheese if desired.

- You can replace beef with ground turkey or chicken.
- For a low-carb version, use cauliflower rice.
