Crockpot Potato Soup 🥔🍲
A warm, creamy soup that’s easy to make in a slow cooker and perfect for a comforting meal.
Ingredients
- 6 medium potatoes, peeled and diced
- 1 small onion, chopped
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 4 oz cream cheese, softened
- 1 tsp garlic powder
- ½ tsp black pepper
- Salt to taste
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled (optional)
- 2 tbsp chopped green onions (optional)
Instructions
- Add ingredients to crockpot
Place diced potatoes, chopped onion, chicken broth, cream of chicken soup, garlic powder, and black pepper in the crockpot. - Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender. - Make it creamy
Add milk and cream cheese. Stir well until the cream cheese melts and blends into the soup. - Thicken (optional)
Mash some of the potatoes with a spoon or potato masher to make the soup thicker. - Add cheese
Stir in shredded cheddar cheese and let it melt. - Serve
Top with bacon and green onions if desired.
