Chicken and Spinach in a Slow Cooker 🍗🥬

A simple, healthy dish where tender chicken cooks slowly with garlic, broth, and spinach to create a flavorful meal.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 3 cups fresh spinach (or 1½ cups frozen, thawed)
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 1 tablespoon olive oil or butter
  • ½ teaspoon dried oregano (optional)
  • ½ cup cream or cream cheese (optional for creamy version)

Instructions

  1. Prepare the slow cooker: Lightly grease the slow cooker with oil or butter.
  2. Add ingredients: Place chicken in the slow cooker. Add onion, garlic, paprika, salt, pepper, and oregano.
  3. Pour broth: Add the chicken broth over the chicken.
  4. Cook:
    • Low: 5–6 hours
    • High: 3–4 hours
  5. Add spinach: About 15–20 minutes before serving, stir in the spinach so it wilts.
  6. Optional creamy version: Stir in cream or cream cheese until smooth.
  7. Serve hot.
