Here’s a simple guide to making Pickled Beets 🥗—sweet, tangy, and perfect as a side dish or salad ingredient.


Ingredients (Makes about 4 cups)

  • 4–5 medium fresh beets
  • 1 cup white vinegar (or apple cider vinegar)
  • 1 cup water
  • ½–¾ cup sugar (adjust to taste)
  • 1 tsp salt
  • Optional spices: 1–2 cloves, 1 cinnamon stick, 5–6 peppercorns

Instructions

1. Prepare the Beets

  1. Wash the beets thoroughly and trim the stems and roots.
  2. Boil or steam beets until tender (about 25–30 minutes for medium beets).
  3. Let them cool slightly, then peel off the skins.
  4. Slice into wedges, rounds, or cubes.

2. Make the Pickling Brine

  1. In a saucepan, combine vinegar, water, sugar, salt, and optional spices.
  2. Bring to a gentle boil, stirring to dissolve the sugar.
  3. Let it simmer for 2–3 minutes.

3. Pickle the Beets

  1. Place the sliced beets into a clean jar or heatproof container.
  2. Pour the hot brine over the beets, ensuring they’re fully covered.
  3. Let it cool to room temperature.

4. Refrigerate

  • Seal the jar and refrigerate for at least 24 hours before eating for best flavor.
  • Pickled beets can last 2–3 weeks in the fridge.

  • For extra spice, include a small piece of ginger or a few chili flakes in the brine.
