Nigerian fried rice

Instructions

1. Cook the Rice

  • Rinse rice under cold water until the water runs clear.
  • Cook rice in boiling water or stock until just tender.
  • Drain and set aside to cool slightly (ideally use rice that is a day old for best texture).

2. Prepare the Vegetables & Meat

  • Heat oil in a large skillet or pot.
  • Sauté onions and garlic until fragrant.
  • Add red and green bell peppers, and mixed vegetables. Cook 2–3 minutes.
  • Add cooked chicken, shrimp, or liver, if using.

3. Add Rice & Seasonings

  • Add the cooked rice to the skillet.
  • Sprinkle curry powder, thyme, stock cubes, salt, and black pepper.
  • Mix gently to combine, ensuring rice is evenly coated.

4. Cook Together

  • Reduce heat to low.
  • Cover and cook for 5–10 minutes, stirring occasionally.
  • Taste and adjust seasoning.

5. Serve

  • Serve hot, often with fried plantains or grilled meat on the side.

  • Use day-old rice to prevent mushy fried rice.
  • Add a few tablespoons of oil to keep the rice fluffy.
