Eba and vegetable soup

Posted on March 9, 2026 by Admin

Here’s a guide to Eba with Vegetable Soup 🇳🇬—a classic Nigerian meal that’s hearty, nutritious, and widely enjoyed.

1. Eba (Garri Swallow)

Eba is made from garri (cassava flour) and is a staple “swallow” used to scoop soups.

Ingredients (Serves 4)

  • 2 cups garri (cassava flour)
  • 2–3 cups hot water (adjust as needed)

Instructions

  1. Boil water.
  2. Pour the hot water into a bowl.
  3. Gradually add garri while stirring continuously to prevent lumps.
  4. Stir until smooth, stretchy, and firm enough to scoop.
  5. Cover and set aside to keep warm.

2. Vegetable Soup

Nigerian vegetable soups are often leafy, rich, and slightly thick. Examples include Efo Riro, Afang, or Ugwu (fluted pumpkin) soup.

Ingredients (Serves 4–6)

  • 2 cups chopped leafy greens (spinach, ugu, or kale)
  • ½ cup palm oil
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 1–2 tbsp ground crayfish (optional)
  • 1–2 cups assorted meat or fish (beef, chicken, or dried fish)
  • 2–3 tbsp ground pepper or chili paste (adjust to taste)
  • 1 tsp salt (or to taste)
  • 1–2 cups water or stock

Instructions

1. Prepare the Meat/Fish

  • Boil meat with some onions, salt, and seasoning until tender.
  • Set aside, adding the stock to the soup for flavor.

2. Cook the Vegetables

  • Heat palm oil in a pot.
  • Sauté onion and garlic until fragrant.
  • Add ground pepper and crayfish; cook for 2–3 minutes.
  • Pour in the meat stock.

3. Add Leafy Greens

  • Add chopped leafy greens.
  • Simmer for 5–10 minutes until the vegetables are tender but still vibrant.
  • Adjust seasoning with salt and spices.

3. Serve

  • Place a portion of Eba on a plate.
  • Serve the vegetable soup alongside or pour it on top.
  • Eat by scooping with your hands (traditional way) or a spoon.

✅ Tips

  • Ugu leaves are traditional, but spinach or kale works well.
  • Add smoked fish or stockfish for authentic flavor.
  • Palm oil gives the soup its distinctive red color and richness.
