Ingredients (Serves 2–3)

  • 2 chicken breasts or thighs
  • 1–2 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli, etc.)
  • 2 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs (oregano, thyme, basil)
  • Salt and black pepper to taste
  • Optional: lemon slices, fresh herbs (parsley, rosemary, thyme)

Instructions

  1. Preheat Oven
    • Preheat oven to 200 °C (400 °F).
  2. Prepare Foil Packets
    • Tear 2–3 large pieces of aluminum foil (big enough to fold and seal the chicken and veggies).
    • Place chicken in the center of each piece of foil.
    • Arrange vegetables around the chicken.
    • Drizzle olive oil or butter, add garlic, herbs, salt, and pepper.
    • Optional: place lemon slices on top for extra flavor.
  3. Seal the Packets
    • Fold foil over the chicken and vegetables, sealing tightly to create a packet.
  4. Bake
    • Place packets on a baking sheet.
    • Bake for 25–30 minutes, or until chicken reaches an internal temperature of 75 °C (165 °F) and vegetables are tender.
  5. Serve
    • Carefully open packets (watch out for hot steam).
    • Serve directly in the foil for a fun presentation or transfer to plates.

  • You can add cooked rice or potatoes inside the packet for a complete one-pot meal.
  • Use parchment paper inside foil for easier cleanup.
