Here’s a simple and versatile Fruit Curd 🍋🍓 recipe—you can make lemon, orange, lime, or even mixed berry curd:


Ingredients (for about 1 cup curd)

  • 3 large egg yolks
  • ½ cup granulated sugar
  • ¼ cup fresh fruit juice (lemon, orange, lime, or a mix)
  • 2 tbsp unsalted butter (cut into small pieces)
  • Zest of 1 fruit (optional, for extra flavor)

Instructions

  1. Combine Ingredients
    • In a heatproof bowl, whisk together egg yolks, sugar, and fruit juice until smooth.
    • Add fruit zest if using.
  2. Cook the Curd
    • Place the bowl over a pot of simmering water (double boiler method).
    • Stir constantly with a whisk or spatula for 7–10 minutes until the mixture thickens and coats the back of a spoon.
  3. Add Butter
    • Remove from heat and stir in butter pieces until fully incorporated and smooth.
  4. Strain (Optional)
    • For extra silky curd, strain through a fine mesh sieve to remove any cooked bits of egg.
  5. Cool and Store
    • Transfer to a clean jar or container.
    • Cover and refrigerate for up to 1–2 weeks.

Tips:

  • Stir constantly to prevent curd from scrambling.
  • Use fresh fruit juice for the best flavor.
  • Fruit curd is perfect for spreading on toast, filling tarts, topping scones, or layering in cakes.
