Strawberry tart

Here’s a classic Strawberry Tart 🍓🥧 recipe—crisp pastry, creamy filling, and fresh strawberries on top:


Ingredients

For the Tart Crust:

  • 1 ¼ cups all-purpose flour
  • ¼ cup sugar
  • ½ cup unsalted butter (cold, cubed)
  • 1 egg yolk
  • 1–2 tbsp cold water

For the Pastry Cream (Filling):

  • 2 cups milk
  • ½ cup sugar
  • 3 tbsp cornstarch
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • 2 tbsp unsalted butter

For the Topping:

  • 1–2 cups fresh strawberries, hulled and sliced
  • 2 tbsp apricot jam or strawberry glaze (optional, for shine)

Instructions

  1. Make the Tart Crust
    • In a bowl, combine flour and sugar.
    • Cut in cold butter until mixture resembles coarse crumbs.
    • Add egg yolk and cold water, mixing until dough comes together.
    • Wrap in plastic wrap and chill for 30 minutes.
    • Roll out dough and fit into a tart pan. Prick the bottom with a fork.
  2. Blind Bake the Crust
    • Preheat oven to 180 °C (350 °F).
    • Line crust with parchment paper and fill with pie weights or beans.
    • Bake for 15 minutes, remove weights, and bake another 10 minutes until lightly golden. Cool completely.
  3. Prepare the Pastry Cream
    • In a saucepan, heat milk until just simmering.
    • In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
    • Slowly pour hot milk into egg mixture, whisking constantly.
    • Return mixture to saucepan and cook over medium heat, stirring until thickened.
    • Remove from heat, stir in butter and vanilla. Let cool slightly.
  4. Assemble the Tart
    • Spread pastry cream evenly in the cooled tart shell.
    • Arrange sliced strawberries on top.
  5. Glaze (Optional)
    • Warm apricot jam slightly and brush over strawberries for a shiny finish.
  6. Serve
    • Chill tart for 1–2 hours before serving for best texture.

  • Use fresh, ripe strawberries for the best flavor.
  • You can substitute strawberries with other fruits like kiwi, blueberries, or raspberries.
  • Make tart crust and pastry cream a day ahead for easier assembly.
