Here’s a classic Scotcheroos 🍫🥜 recipe—a chewy, sweet, and crunchy no-bake bar loaded with peanut butter, chocolate, and Rice Krispies:


Ingredients

  • 3 cups Rice Krispies cereal
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • ½ cup butterscotch chips (optional, for extra flavor)

Instructions

  1. Prepare the Pan
    • Line a 9×13-inch pan with parchment paper or lightly grease it.
  2. Make the Peanut Butter Mixture
    • In a saucepan over medium heat, combine sugar, corn syrup, and peanut butter.
    • Stir constantly until the mixture is smooth and slightly bubbling.
    • Remove from heat and stir in vanilla extract.
  3. Mix with Cereal
    • Immediately pour the peanut butter mixture over the Rice Krispies.
    • Stir quickly until all cereal is evenly coated.
    • Press the mixture into the prepared pan evenly.
  4. Top with Chocolate
    • Melt chocolate chips and butterscotch chips together (microwave in 30-second intervals, stirring in between).
    • Pour over the pressed cereal mixture and spread evenly.
  5. Chill
    • Refrigerate for 1–2 hours until set.
  6. Serve
    • Cut into squares or bars and enjoy!
