Vegetable Omelette Muffins 🧁🥚 are a healthy, easy breakfast or snack made by baking eggs with vegetables in a muffin tray. They are quick, nutritious, and great for meal prep.

Ingredients

  • 6 large eggs
  • ¼ cup milk
  • ½ cup bell peppers (finely chopped)
  • ¼ cup onion (finely chopped)
  • ¼ cup tomatoes (diced, seeds removed)
  • ¼ cup spinach or coriander (chopped)
  • ½ cup shredded cheese (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red chili flakes (optional)
  • 1 tsp oil or butter (for greasing)

Instructions

  1. Preheat the Oven
    • Preheat oven to 180 °C (350 °F).
  2. Prepare Egg Mixture
    • In a bowl, whisk eggs and milk.
    • Add salt, black pepper, and chili flakes.
  3. Add Vegetables
    • Mix chopped bell peppers, onion, tomatoes, and spinach into the egg mixture.
    • Add cheese if desired.
  4. Fill Muffin Tray
    • Grease a muffin tin with oil or butter.
    • Pour the egg mixture into each cup, filling about ¾ full.
  5. Bake
    • Bake for 15–20 minutes until the muffins are set and slightly golden.

Serving

Let them cool for a few minutes and remove from the tray. Serve warm for breakfast or as a healthy snack.
