🧀🥕 Cheesy Vegetable Rolls

Cheesy Vegetable Rolls are soft, savory rolls stuffed with a flavorful mix of sautéed vegetables and melted cheese. They’re perfect as a snack, lunchbox item, appetizer, or light dinner.

🧾 Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • 2¼ tsp active dry yeast (1 packet)
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp oil or melted butter
  • 1 cup warm milk (or water)

For the Filling:

  • 1 cup grated carrot
  • ½ cup finely chopped capsicum (bell pepper)
  • ½ cup finely chopped cabbage
  • ¼ cup sweet corn (optional)
  • 1 small onion, finely chopped
  • 1–2 cloves garlic, minced
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tbsp oil
  • Salt and black pepper to taste
  • ½ tsp chili flakes or Italian seasoning (optional)

👩‍🍳 Instructions

1️⃣ Make the Dough

  1. Mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Add flour, salt, and oil.
  3. Knead 8–10 minutes until soft and elastic.
  4. Cover and let rise 1 hour (until doubled).

2️⃣ Prepare the Filling

  1. Heat oil in a pan.
  2. Sauté onion and garlic until soft.
  3. Add vegetables and cook 3–4 minutes (keep slightly crisp).
  4. Season with salt, pepper, and chili flakes.
  5. Let cool, then mix in cheese.

3️⃣ Shape the Rolls

  1. Punch down dough and divide into equal portions.
  2. Flatten each into a circle.
  3. Add filling in the center.
  4. Seal tightly and shape into rolls.
  5. Place on a greased tray.

4️⃣ Second Rise

Let rolls rest 20–30 minutes.

5️⃣ Bake

  • Bake at 350°F (180°C) for 18–22 minutes until golden.
  • Brush with butter after baking for extra softness.

💡 Tips for Extra Flavor

  • Add a spoon of pizza sauce inside for a pizza-style roll.
  • Sprinkle sesame seeds on top before baking.
  • Mix herbs like oregano or parsley into the dough.
  • For a spicy version, add chopped green chilies or jalapeños.
