🥗 Salad with Pickled Tomatoes

Pickled tomatoes (quick version)

  • 2 cups cherry or small tomatoes (halved)
  • ½ cup vinegar (white or apple cider)
  • ½ cup water
  • 1–2 tbsp sugar (optional, for balance)
  • 1 tsp salt
  • 2–3 garlic cloves (smashed)
  • Optional: peppercorns, chili flakes, herbs (dill or oregano)

How to make:

  1. Heat vinegar, water, salt, and sugar until dissolved (don’t need full boil).
  2. Pour over tomatoes in a jar.
  3. Let sit at least 30–60 minutes (better after a few hours in the fridge).

Salad base

  • Mixed greens (lettuce, arugula, or spinach)
  • Cucumber slices
  • Red onion (thinly sliced)
  • Feta or mozzarella (optional)
  • Olives (optional)

Dressing (simple and light)

  • 2 tbsp olive oil
  • 1 tbsp of the pickling liquid (this adds great flavor)
  • Pinch of salt and black pepper
  • Optional: honey or mustard

Assemble

  1. Add greens, cucumber, onion, and cheese to a bowl.
  2. Top with pickled tomatoes.
  3. Drizzle dressing and gently toss.
