New Salad Recipe

Here’s a fresh, simple new salad recipe you can try:

🥗 Crunchy Honey-Lemon Chickpea Salad

Ingredients:

  • 1 can chickpeas (drained & rinsed)
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (finely sliced)
  • 1/2 cup sweet corn (boiled or canned)
  • A handful of fresh parsley or coriander
  • 1 avocado (optional, cubed)

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 small garlic clove (minced)

Instructions:

  1. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, corn, and herbs.
  2. In a small bowl, whisk together all dressing ingredients.
  3. Pour dressing over the salad and toss well.
  4. Add avocado last (if using) and gently mix.
  5. Chill for 10–15 minutes before serving for better flavor.

  • Refreshing and crunchy
  • Light but filling
  • Perfect for lunch or a healthy dinner side
