Here’s a classic Southern Fried Chicken Batter—crispy, flavorful, and close to that traditional Southern-style crunch.


🍗 Southern Fried Chicken Batter

🧾 Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp cornstarch (extra crispiness)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1 tsp baking powder

For wet mix:

  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 egg

🍳 Instructions

1) Prep chicken

  • Use chicken pieces (drumsticks, thighs, wings, or breast)
  • Pat dry

2) Make batter

  • In one bowl: mix flour + spices + baking powder
  • In another bowl: whisk buttermilk + egg

3) Coat chicken

  • Dip chicken in wet mix
  • Coat in flour mixture
  • For extra crunch: dip again in wet, then flour (double coating)

4) Rest (important step)

  • Let coated chicken sit 10–15 minutes
    👉 Helps the crust stick better

5) Fry

  • Heat oil to ~170–175°C
  • Fry 12–15 minutes (depending on size)
  • Turn occasionally until golden brown and cooked through

🍽️ Tips for best results

  • Don’t overcrowd the pan
  • Keep oil temperature steady
  • Add a little of the wet mix into flour to create crispy flakes

🔥 Optional flavor boost

  • Add a dash of hot sauce to the buttermilk
  • Mix dried herbs (thyme, oregano) into flour
