Here’s a reliable, restaurant-style method that gives you crunchy coating + tender inside every time.


🧾 Ingredients

  • Chicken (pieces: drumsticks, thighs, wings)
  • 2 cups Buttermilk
  • 1–2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder (optional)

For coating:

  • 1½ cups all-purpose flour
  • ½ cup cornstarch (secret for extra crispiness)
  • 1 tsp baking powder
  • Extra salt & spices (same as above)

1. Marinate (key step)

  • Soak chicken in buttermilk + salt + spices
  • Refrigerate for at least 4 hours (overnight is best)

2. Prepare coating

  • Mix flour, cornstarch, baking powder, and spices

3. Coat the chicken

4. Fry

  • Heat oil to 170–175°C

5. Rest
